Potato, anyone?

Still waiting for some more good POTATO recipes at Mac 'n GeeeeeZ...see my POST and get over there :-) We've got some GOOD ones in the comments already :-) (Now, please see my post below and tell us who YOU think will be the biggest loser at the White House....oops, let me rephrase that, heh)

Try this; it's good.

Microwave Scalloped Potatoes

4-6 red potatoes skins on sliced thin
1 medium onion chopped coarsely
A quantity of butter (i stick should be plenty)
1/2 to 3/4 C grated Romano or Parmesan cheese
1-1/2 C milk (skim will work fine)

Arrange a layer of potato slices in a microwaveable baking dish. Sprinkle with a thin layer of onions, S&P, grated cheese, dots of butter.

Repeat process till you run out of potatoes or the baking dish is full. Be sure to top with potatoes not onions and plenty of butter and cheese.

Pour in 1 C milk -- a little more, if you have filled the dish to the brim with potatoes. NOTE: Do NOT add milk to cover -- that's too much. Milk should reach the halfway point no more.

Microwave open dish on high for 6 or 7 minutes. Test potatoes for doneness. You don't want them undercooked, but not too soft either. If still too firm by your definition, put dish back in microwave and cook for another minute or two.

This makes a great side dish with any grilled or roasted meat. Works well with fish too.

Add a green salad dressed with lemon juice, 1 clove pureed garlic, 1/4 tsp Dijon mustard, S&P with olive oil, and you have a very pleasant meal easy to prepare.

Mmmmm. Sounds good. I never thought about cooking scalloped potatoes in the microwave.

Do you have Aretha Franklin's Mac and Cheese recipe?

Egg noodles
1 pound extra sharp cheddar cheese
1/2 pound monterey jack cheese
1/2 pound pepper jack cheese
1/2 pound parmessan cheese
1/2 pound Velveeta cheese
couple dashes ground red pepper
salt to taste
1/2 stick butter (not margerine)
1 cup milk
1 egg

Cook noodles, drain set aside.
grate all cheese, toss.
grate butter into cheese, toss.
beat egg into milk.
mix noodles and cheese/butter mixture.
place in large glass baking pan.
pour milk/egg over
bake covered with tin foil in 350 oven for approximately 30 minutes, or until set.
remove tin foil and bake another 5 minutes.
serve hot.

I went to Mac N Geeez and couldn't comment on the potato thread. Wassup?

Morgan's French Fries (tasty method first)

1. Using large potatoes, cut the potatos into four inch long, thick fries

2. Fry in peanut or vegetable oil

3. Combine 1 cup mayo, 1 tbsp. curry, tsp. hot sauce, 1/2 tsp. garlic, add a little water to losen texture of sauce and stir.

You get great fries with an irresistible spicy curry sauce!

*The more healthy recipe uses light mayo and baking the fries instead of frying them.

*The most healthy recipe requires you to drink the water in the recipe and then go for a run. :-)
